I mix my overripe bananas with oats, cinnamon and a bunch of other stuff on hand. I shape them into cookie shapes and cook for 10 minutes at 150 degrees. Really healthy bitesize treats.

I use the above as my base recipe and add bits and pieces to it. At the moment i have been adding peanut butter and chopped up dates and I love it. If you need it sweeter, you could always add a bit of sugar or honey.

Sounds delicious. I normally bake banana muffins with overripe bananas but will have to try your recipe.

@JuJu – when I cook them for 10 minutes they are quite soft, if I want them with a bit more crunch I keep them in the oven for longer

I do a lot of soups, seldom with a recipe. I bung random veggies in my big boiler, & then hit them with my food processor once it’s cooled a little. I live alone, so I cook huge batches & freeze individual serves.

I forgot to mention that I usually add miso paste, a Japanese food made from fermented soybeans: fermented foods benefit the gut microbiome. I buy it from the international foods aisle at Coles or Woolies. It’s available in red or white. Red miso paste is very dark brown & tastes like beef stock: it adds a rich, savoury flavour to vegetable or beef dishes like spag bol. White miso paste is actually green in colour & tastes like chicken stock. Use about 1 teaspoonful per serving. It has a salty taste, so skip the salt in your recipe.
